Vancouver, a Melting Pot of Flavors

When I arrived in this city, I had no idea how far my taste buds were about to travel.
Below is a glimpse of the countries my palate has journeyed through.
From West to East and North to South:
Canada, United States, Mexico, United Kingdom, France, Italy, Greece, Turkey, Lebanon, Iran, Pakistan, India, Nepal, China (Canton and Shanghai regions), Thailand, Malaysia, Vietnam, South Korea, Taiwan, Philippines, Japan.

A total of 21 countries in 21 days. It was a true awakening of the senses.
To illustrate this culinary delight, I would like to share a few favorites (besides the dishes prepared by my friends, of course):

  1. Galbi-jjim Beef from Sura Restaurant
    Welcome to South Korea.
    Tender beef ribs slow-cooked with pumpkin and mushrooms in a rich, spiced soy sauce. The melt-in-your-mouth combination of the pumpkin and beef, plus the thick, sweet and silky sauce is absolutely divine.
  1. Lamb Karahi from Karakoram Restaurant
    A stopover in Pakistan.
    Slow-cooked for several hours, this dish made with a blend of spices, tomatoes, garlic and ginger, creating a true firework of flavors in your mouth. (Photo from restaurant website)
  1. Palak Paneer and Butter Naan from Dhamaka Restaurant
    A transfer in India.
    The paneer (Indian cheese made from buffalo milk) is delicately nestled in the palak (a thick puree made of spinach, garlic, onions and various spices). Tasting instructions: take a piece of naan (served warm), dip it halfway into the palak then scoop a piece of paneer with a spoon. This allows you to enjoy the flavor of the naan while savoring the aromas of the palak paneer. It’s impossible to resist this creamy combo!
  1. Pistachio Baklava from Miraas Restaurant
    A detour through Iran.
    This pastry, served warm and soaked in a syrup of rose water, cardamom and clarified butter, creates an explosion of flavors. The crunch of the pistachios and walnuts adds a unique texture to this sublime dessert.

Vancouver, thank you for this culinary journey.

Beyond the vital need to feed ourselves, it's essential to take pleasure in eating.
Lead with your nose.
Listen to your taste buds.
Feeeeeeel your palate.

It's amazing how a simple bite can transform an ordinary moment into something special.
